Lighting the Pit

The wood fire starts under starlight. Pitmasters stack seasoned olive logs to form white-glowing ash beds.

07:30 AM

Eid Congregation & Blessings

As the first prayers conclude, the pasture meat is prepped and slow-placed into the low-heat underground pits.

11:00 AM

Saffron Sourdough Pull

Golden loaves, rich with saffron, cardamom, and mountain honey, are pulled bubbling hot from clay ovens.

01:30 PM

The First Carving

The 14-hour lamb is uncovered. Exquisitely tender meat falls off the bone, ready to be segmented into sharing trays.

The Communal Table

Guests sit under olive branch shade. Trays are shared, stories are passed down, and neighbor feeds neighbor.
